Cilantro Lime Dressing
It wasn't till late in high school before I discovered how much I love cilantro (also knows as coriander). Luckily, I'm one of those people without the genetic predisposition for cilantro tasting "soapy." Today, cilantro is praised for it's anti-bacterial and antioxidant qualities, and it is promoted by many naturopaths to help treat conditions such as anxiety, sleep disorders, and toxic-metal cleansing.
Grow or get some cilantro. Make this dressing. It's a perfect addition to any mexican or asian meal!

CILANTRO LIME DRESSING
1 avocado
1 cup (or more) cilantro, chopped
2 limes, juiced
1/3 c olive oil
1 1/2 T tamari
1 t cumin
1 clove garlic
pepper, to taste
1 cup water, or as much needed
Blend all ingredients until the dressing is smooth, adding as much water as needed.
