Spicy Mango-Pepper Salsa
It's pepper season!
Not only is my cayenne plant going crazy, but the farmers markets are loaded with varieties. So, it was time to use as many peppers as I could that I bought last weekend:
Mango Pepper Salsa:
2 ripe mangos, peeled pitted and diced
1 red bell pepper, seeded and diced
1 c spicy peppers of your choice, seeded and diced
1 c cilantro, loosely packed
3/4 c red onion, diced
2 limes, juiced
2 cloves garlic, minced
salt and pepper, to taste
I threw everything into a food processor to finely chop the ingredients (and because I was feeling lazy). As long as the ingredients are chopped evenly, this would make a great chunky salsa as well without the use of a food processor!
