Tomato Basil Soup (Raw Vegan)

I saw my first snow flurry of the season this week! I also started to put out Christmas decorations, but it still might be too soon to get excited about those....

Here's another easy soup recipe. You can eat this soup raw or warmed on the stove. 

3 roma tomatoes
½ c sundried tomatoes, soaked and drained
1 c water
2 T olive oil
½ avocado
1 large garlic clove
1 lemon, juiced
⅛ t sea salt
handful basil
pepper to taste

Blend all ingredients until smooth. Makes ~3 cups.
